Meatballs

“You’re so lucky” my kids’ friends often tell them, “your mom is a chef so you must be eating yummy food all the time!”

Well, depends who you ask. My three kids represent the whole spectrum of children’s attitudes toward food. My eight year old son eats everything; his 10 year old sister would cautiously try many foods and sometimes would stick with one of them. His twin sister, a self-proclaimed “pizzavore”, won’t eat anything that’s not pure white carbohydrates.

So you see, I don’t have any magic trick up my sleeves to get kids to eat healthy. I think this is just like any other learning process. It takes time and patience and most importantly – it is best learned by example. The same way kids pick up on our other habits (for better or worse), eventually they will eat the way we eat.

In the meantime I cook “middle of the road” foods and then tweak them to please all ages. For example my veal meatballs: I serve them to my kids over pasta and for me on a bed of vegetables that I roasted along with the meatballs. I have also found that if I use a colorful assortment of vegetables, kids are intrigued and ask for a taste.

Veal and Ricotta Meatballs
1 pound ground veal
½ cup ricotta
1 egg
1 cup freshly grated Parmigiano-Reggiano, plus more for serving
1/2 cup whole wheat bread crumbs
1/4 teaspoon baking soda (to make meat balls fluffy)
1 tablespoon kosher salt, or as needed
freshly ground black pepper
4 cups mild jarred tomato sauce

For vegetables
2 cups assorted colorful vegetables (such as peppers, broccoli, carrots) cut into 1 inch chunks. Frozen veggies do just fine.
1-3 tablespoons olive oil
Salt and pepper to taste

Preheat the oven to 400 degrees. Spray a large roasting pan with olive oil

Combine all meatballs ingredients except sauce in a bowl and mix with hands until completely smooth and homogenized, about 4 minutes. If you don’t like to touch raw meat, use disposable gloves from the pharmacy. Cover and chill before shaping into meatballs.

In the meantime prepare vegetables for roasting. Mix them with oil and salt on the roasting pan spread them evenly and place in the oven to start cooking.

Gently form meat mixture into nine balls. It helps to do it with slightly wet hands. Pull the baking sheet off the oven and place meat balls on vegetables. Roast for about 20-30 minutes – until meat balls are cooked through and vegetables are soft.

Meanwhile, heat sauce in pot over medium-low heat and when meatballs are done, remove them from pan and add to sauce. Serve meatballs in sauce alone, or over pasta, with grated Parmigiano-Reggiano passed separately. Serve the vegetables in a separate serving dish.
